Before you get to the point where you are "clicking on the X's" you need to order them built. There are small boxes on the ground with icons for the Ram and Siege Towers. There are 4 other boxes/outlines on the ground for you to select the actual siege engines. Click on and select the ones you want while the siege camp is being built.
Prophesy of Pendor had a mercenary system similar to Bannerlord's, except you didn't have to personally find the party on the map to hire them. You could just talk to your Minister at your court (if I recall correctly) and hire mercenaries through the dialogue menu. I massively preferred that.
As far as nonbattle strategy theres only like two things you can do. Buy all the food of a town before declaring war and besieging and IDK i forgot the other one, if there even is one. Bannerlord will be an amazing game. In ten years. Hopefully by that time all the modders are still around to actually make overhauls.

Community patch needs to be at the bottom of your load order. Are mercenaries worth it yet? As the title says, as given my massive success in using hired blades, crossbowmen sharpshooter and merc cavalry in OG mount and blade to farm renown etc, I'd like to do same again in bannerlord as come on those hired blades in OG nothing to sniff at. Or should I stick to a core of imperial infantry backed by Navigate to the settlement/castle you want to grant to your companion. It automatically selects the closest. Open the party screen and talk to your companion. Click the "I wish to make you my vassal." option. Select the settlement you wish to grant them. Name the clan in the pop up. As such you need to have the Disciplinarian perk in order to transfer a Bandit unit to a proper unit. This perk can be found in the Leadership tree. You must get Leadership to level 125 and then choose the Disciplinarian perk from the skill tree. That is the only way you can train bandits to become proper units within your army.A pass and 30k later, I now had a mercenary clan as a proper vassal. This is clearly a bug but I thought it was so sick, in the first playthrough I made a kingdom my first move was to get these clans to join and now I finally get to do it. When my account is able to, I'll make another post with an image that shows it.
